From Busboy Dreams to Culinary Legacy
Alberto, our Co-Founder, first began working at a Las Vegas restaurant as a busboy at a young age. Born in Mexico City, Mexican cuisine and culture has always been very important to him. With his Co-Founder, Francisco, they have created special recipes that represent the cuisine and culture of Mexico. As a father and grandfather, Alberto now brings the best representation of his culture to his family, friends, and community.
The Chef Bringing Mexico to Vegas
Francisco, our Co-Founder and Chef, is the person behind the flavor of Frijoles. Francisco is a master of flavor, and he obsesses over each and every ingredient that goes into the Frijoles menu. Insisting that each menu item be as fresh as possible every day, Francisco and his dedicated team come in early each morning to prepare everything from the aguas frescas displayed behind the counter to the red and green salsas. With years of experience in the food industry, both as a chef and as a kitchen manager, Frijoles is proud to call Francisco its chef. Francisco is a dedicated husband and father of three children.
